This is a bit of an American classic and we thought it would be a great dish to kick off the spring with, all the health benefits of fresh salads and vegetables with a comfortingly rich homemade dressing with blue cheese for when the sun is looking a bit shy in the sky!

Shopping List

  • 80ml red wine vinegar 
  • 1 tbsp dijon mustard
  • 160ml extra virgin oil
  • Salt and pepper 
  • 1 cos lettuce – chopped 
  • 1 bunch watercress
  • 2 eggs – quartered 
  • 130g Roquefort – crumbled 
  • 340g cooked chicken -diced 
  • 6 slices streaky bacon (grilled crispy)
  • 1 avo – sliced 140g cherry tomatoes 
  • 2 tbsp chives – finely chopped 

Method

  1. For the dressing, you simply need to shake all the ingredients (Red wine vinegar, dijon mustard, olive oil)  in a jar, and after whisk in the Roquefort cheese until you have a creamy emulsion
  2. In a big bowl scatter the cos and watercress evenly, arrange and layer the chicken, avocado, eggs and bacon over the top, then dress liberally with the vinaigrette, season and  finish with chopped chives
